Bangers and Red Flannel Hash

Ingredients

1 ea. Chicken apple sausage, halved
2 ea. Eggs
2 oz. Hollandaise
3 oz. Sweet potato
3 oz. Red skin potato
3 oz. Beets
2 tbsp. Bacon
2 tbsp. Red onion
Garnish with chives

Preparation

  1. Cut sausage in half and sear on flat top
  2. Mix together potatoes, beets, bacon and onion and sear on flat top
  3. Once potatoes are golden brown plate them
  4. Place sausage crisscross and on end and the eggs on the other
  5. Drizzle hollandaise over eggs
  6. Garnish eggs with chives
