| 3 | ea. | Pineapple Rings |
| 2 | oz. | Pineapple, diced |
| 4 | oz. | Rum syrup |
| 3 | ea. | Pancake batter |
| Garnish with mint |
Preparation
- Sauté diced pineapple and rum syrup
- Place pineapple rings on flat top and pour batter around rings and cook normal
- Stack pancakes on top of each other and drizzle syrup mixture over the top
- Garnish with mint sprig
