Pineapple Upside-down Pancakes

Ingredients

3 ea. Pineapple Rings
2 oz. Pineapple, diced
4 oz. Rum syrup
3 ea. Pancake batter
Garnish with mint

Preparation

  1. Sauté diced pineapple and rum syrup
  2. Place pineapple rings on flat top and pour batter around rings and  cook normal
  3. Stack pancakes on top of each other and drizzle syrup mixture over the top
  4. Garnish with mint sprig
