Ingredients

6 oz. Liquid Egg
1 oz. Asparagus
1 ea. Overnight tomatoes, chopped
1 oz. Red Onion
1 oz. Red Bell Pepper
2 oz. Goat Cheese
2 oz. Tomatillo Salsa

Preparation

  1. Combine all ingredients except the goat cheese and scramble medium
  2. Place in frittata pan
  3. Sprinkle goat cheese and place under the salamander till cheese is goldenish
  4. Serve with side of tomatillo salsa
