Ingredients

1 ea. Pizza Dough, grilled on both sides
oz. Mascarpone
2 oz. Mozzarella Cheese
2 oz. Cooked Wild Mushroom Mix
½ oz. Pancetta, diced and rendered
1 oz. Baby Arugula
½ oz. Pecorino, shaved

Preparation

  1. On pregrilled pizza dough, spread mascarpone and top with mozzarella
  2. Sprinkle on mushrooms, and pancetta, bake in pizza oven until done
  3. Cut and Plate on Pizza Paddle
  4. Garnish with arugula & pecorino
