Ingredients
| 1 | ea. | Pizza Dough, grilled on both sides |
| 1½ | oz. | Mascarpone |
| 2 | oz. | Mozzarella Cheese |
| 2 | oz. | Cooked Wild Mushroom Mix |
| ½ | oz. | Pancetta, diced and rendered |
| 1 | oz. | Baby Arugula |
| ½ | oz. | Pecorino, shaved |
Preparation
- On pregrilled pizza dough, spread mascarpone and top with mozzarella
- Sprinkle on mushrooms, and pancetta, bake in pizza oven until done
- Cut and Plate on Pizza Paddle
- Garnish with arugula & pecorino
